  • 6-7 tortilla wraps
  • 6-8 chipotle peppers in adobo sauce (adjust for spice level)
  • 3-4 garlic cloves
  • Salt, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1-2 tbsp lemon juice
  • 3 tbsp oil
  • 1 cup mozzarella cheese
  • 1 red onion, chopped
  • 1 cup mixed bell peppers, chopped
  • 1 cup Romaine lettuce, chopped
For the Chipotle Yogurt Sauce
  • 5-6 tbsp yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 1/2 tbsp reserved chipotle sauce
  • 1 tbsp fresh parsley, chopped

Instructions

Step 1: Prepare the Marinade

  1. In a food processor, blend the chipotle peppers, garlic cloves, lemon juice, salt, and black pepper until smooth.
  2. Set aside 1 1/2 tablespoons of this marinade for the chipotle yogurt sauce.

Step 2: Marinate the Chicken

  1. Place the chicken in a bowl and pour the remaining marinade over it.
  2. Add oil and stir to coat the chicken evenly with the marinade.
  3. Cover and let it marinate for at least 20 minutes, or longer if possible, to enhance flavor.

Step 3: Cook the Chicken

  1. Heat a skillet over medium-high heat.
  2. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes.

Step 4: Make the Chipotle Yogurt Sauce

  1. In a bowl, combine the yogurt, mayonnaise, lemon juice, salt, pepper, garlic powder, and the reserved chipotle sauce.
  2. Mix well until smooth, then add the chopped parsley.

Step 5: Assemble the Wrap

  1. Lay a tortilla on a flat surface and add a scoop of the cooked chicken, a sprinkle of mozzarella cheese, a drizzle of the chipotle yogurt sauce, and a handful of chopped red onion, bell peppers, and Romaine lettuce.
  2. Fold the tortilla tightly to form a wrap.

Step 6: Heat the Wrap

  1. Place the assembled wrap on a warm skillet over medium heat.
  2. Cook for about 2-3 minutes on each side until the tortilla is golden brown and crispy, and the cheese inside has melted.

Tips for Serving

  • Adjust the Spice Level: If you prefer a milder wrap, use fewer chipotle peppers. For more heat, add extra peppers or even a dash of hot sauce to the marinade.
  • Customize Your Wrap: Feel free to add more vegetables or toppings like avocado slices, shredded carrots, or even a bit of corn for extra crunch and flavor.
  • Make It Ahead: Marinate the chicken in advance for easy weeknight prep!

Serve this delicious Chipotle Chicken Wrap hot, fresh from the skillet, and enjoy a spicy, cheesy, and refreshing treat.
