Ingredients:

  • 1 cup rice
  • 1 can butter beans, rinsed and drained
  • 1 tbsp minced garlic
  • 1 cup sliced Italian olives
  • 1 cup sliced cherry tomatoes
  • 1 cup chopped sundried tomatoes
  • 2 cups chopped spinach
  • 1 (10 oz) jar marinated artichoke hearts
  • 1/2 lemon, juiced
  • 1/2 cup coconut milk
  • 2.5-3 cups water
  • 1 tsp salt
  • 1/4 tsp pepper
  • Parsley for garnish
  • Vegan feta for garnish

Directions:

  1. Prep the Ingredients: Preheat your oven to 400°F (200°C). Start by rinsing and draining the butter beans, and slice up the Italian olives and cherry tomatoes. Chop the sundried tomatoes and spinach, then drain the marinated artichoke hearts.
  2. Mix it Together: In a large casserole dish, combine the rice, butter beans, minced garlic, Italian olives, cherry tomatoes, sundried tomatoes, spinach, and artichoke hearts. Add the lemon juice, coconut milk, salt, pepper, and water. Make sure the rice is fully submerged in the liquid so it cooks evenly.
  3. Bake to Perfection: Cover the casserole dish with foil and bake in the preheated oven for about 40 minutes, or until the rice is fully cooked and tender. If needed, add a little more water halfway through cooking to keep the rice moist.
  4. Garnish & Serve: Once the rice is done, remove it from the oven and give it a good stir. Garnish with crumbled vegan feta and freshly chopped parsley for a burst of flavor and color.
